Weekend Recap

Friday night, I stayed in considering I had to wake up at 5am to take my mom to the airport for a business trip.    Instead of doing absolutely nothing and wasting the night away, I decided to finally plant my garden I have been planning on doing since forever.  I figure with all the produce I eat, it’d be smart to grow my own veggies when I can..possibly save some money!  Also I like the idea of being able to just walk out my back door and to my garden the next time I find myself trying to make a salad and realize my mom used the last of the cucumber.

image_1I am growing celery, eggplant, zucchini (yellow and green), tomatoes, bell peppers, basil, thyme, mint, parsley, cilantro and I’m also attempting to grow a strawberry bush.   Last time I tried to go strawberries it didn’t turn out so well.  Now that it’s done, I just have to discipline myself enough to keep up with it by weeding it and watering it. I’m giving myself the benefit of the doubt that i won’t let it go to waste this time as I did  other times when I tried to grow a garden.

After taking my mom to the airport Saturday morning, I came back and made some oatmeal and a hot mug of coffee in this fabulous new mug my mom got me.  There’s a story behind the saying, which is why she picked this one.image_2

When I was going to school in New York, I was sitting in a class waiting for it to start, when a classmate came in and said there’s a HUGE shoe sale at Macy’s right now!  I texted my mom: “HUGE shoe sale at macys.  Do I go or stay in class?”  She replied “YOLO.”  I don’t even know where she learned that. So anywho now it’s a little joke between us.  But really…considering my super uptight, Type A personality, I could use a little reminder to lighten up and have fun every now and then.  And she knows that about me all too well.

Later in the morning, I snacked on some nuts and a cup of green tea while working on some blog stuff.

Shortly after, I decided to make a healthy dessert to have on hand for the week.  I went with these vegan, no-bake brownies.

I got the recipe from FitSugar.  They’re actually pretty decent tasting.  Not an actual brownie, but I wouldn’t expect it to be without all the fat and eggs and actual flour.  I’d say they’re enough to curb a craving!

Then I had a staff meeting for work from 12:30-3:30.  The students’ spring recital is coming up next weekend, so it’s been super crazy there.  We also had to work on our ‘coaches routine.’  We are dancing to “Work B*tch” by Britney…obviously the edited version.  It felt good to dance again, and I’m actually pretty pumped to perform again too :)

That night I went out to see the movie Neighbors.  Have you seen it yet?  It was okay.  I was expecting it to be a lot better based on all the noise about it on social media. It had it’s funny parts don’t get me wrong, but the story line overall was lacking something.

My sunday morning spin class with Karen, aka fav instructor ever, was good!  I left feeling like I really had a solid workout .  Lately I’ve been leaving the gym thinking, “Could I have done better/more?” That is such an annoying feeling!

As I write this I’m out on my back patio, it’s Sunday afternoon.  I had a lovely salad, topped with tuna, followed by a healthy raw brownie.

And it is a gorgeous day.  Such a gorgeous day that a friend invited me out on a run, and despite the fact that I already took an hour long spin class, I couldn’t resist. The sunshine is calling  my name.

Cody and Sadie are enjoying the weather as well.  I’m off to go for a run!  Hope you all had a fantastic weekend!
