This Mexican kale salad is bold, full of flavor, and packed with nutrients!
I don’t know what it is, but lately, I am all about kale salads for lunches! I’ve been enjoying coming up with some tasty combinations to make this dark, leafy green come to life! This Mexican Kale salad is one of my favorite combos I have come up with so far. I am so excited to share the recipe with you guys today!
Not only is it tasty, but it is SUPER filling too, which is exactly what we want out of a midday meal, right?! And I don’t mean filling like it totally weighs you down for the rest of the day. With all these healthy ingredients and nutrients, this salad gives you the oomph you need to finish your day off strong!
Let’s talk about the base this beauty: kale.
Kale is very low in calories and very high in nutrients. It has 133 percent of your daily Vitamin A and C requirements. Move over oranges! Kale is also a great source of Vitamin B, E, K. It contains the minerals: calcium, iron, potassium, and phosphate. Bottom line: Kale is a nutritional beast, and you should eat more of it.
Then, we have some avocado for some healthy fats to leave you feeling full and energized. The grain of this salad is quinoa, which also packs some extra protein as well. There’s some black beans in there for a little more protein and fiber! Beans are also great at leaving you feeling satiated. The main protein of this dish is the ground turkey, which is seasoned with some Mexican spices. Half of a red bell pepper gives the dish a fresh crispness along with a vibrant red color!
Mexican Kale Salad
- 2 cups curly kale
- 2 tsp olive oil
- 1/2 red bell pepper, diced
- 1/4 cup black beans
- 1/4 avocado, diced
- 1/4 cup cooked quinoa
- 2-3oz. ground turkey
- 1 garlic clove, crushed
- 1/2 lime
- 1/2 tsp Mrs. Dash Southwest Chipotle seasoning
- Salt and Pepper
- Season and brown your ground turkey in a skillet. You can use the Mrs. Dash seasoning or any other mix of seasonings to give it that 'kick'
- Massage olive oil, juice from 1/2 a lime, crushed garlic, and salt and pepper into kale.
- Top salad with cooked ground turkey, quinoa, avocado, red bell pepper, beans, and dig in!
I hope you enjoy this salad as much as I do! It frequents my meal plan lately. I usually just make a whole pound of ground turkey on Sunday, and then make several of these salads with it throughout the week.
